The extraction of olive oil is a cold process that occurs in two fundamental phases: the grinding of the pulp (milling or crushing) and the subsequent separation of the oily fraction from other solid and liquid components (extraction).

The oil is produced from the harvesting of our olives, which took place between late October and November. It is slightly cloudy and slightly greenish.

Shipping & Delivery

We ship on Mondays and Tuesdays to guarantee maximum freshness and avoid weekend stops in depots. We harvest according to orders, so the citrus fruits are shipped freshly picked.
