Organic lemons are lemons grown according to organic farming methods,
regulated by the European Union and verified by a third-party body. It does not involve synthetic pesticides,
herbicides or chemical fertilizers: the result is a more authentic fruit, with a peel that
can be used in cooking. Ours areBioagricert certified.

Are organic lemons treated? Is the peel edible?

No, our organic lemons are not surface-treated: no synthetic waxes,
anti-mold agents or post-harvest preservatives. Precisely for this reason, thepeel is edible,
meaning it can be eaten. You can grate the zest to flavor desserts, first courses, fish and
cocktails, or use it to prepare limoncello and marmalade.

A practical detail: the peel of untreated lemons may appear more irregular and
less shiny than that of waxed conventional lemons. It is a sign of authenticity, not a
defect.

What variety of lemon do we grow: the Femminello Siracusano

We grow theFemminello Siracusano, the historic cultivar of the Syracuse citrus groves,
characterized by a high juice content and a peel rich in
oil glands and high-quality essential oils. The plant is called "femminello" (little female) for its
remarkable fertility: it re-flowers several times during the year, yielding three harvests with
different characteristics.

Our lemons follow three blooms that cover the entire year. ThePrimofioreripens from October to March: it has an elliptical shape, light green to lemon-yellow peel and pulp, and lemon-yellow juice. This is followed by theBianchetto, from April to June, which has an elliptical-ovoid shape, with light yellow peel, yellow pulp, and lemon-yellow juice. Finally, theVerdello, from July to September, has an elliptical-spheroidal shape, with light green peel and lemon-yellow pulp and juice.

When are organic Sicilian lemons available? Seasonality

Thanks to the three blooms of the Femminello Siracusano, organic Sicilian lemons are
available almost all year round. The size is mixed and belongs toCategory I
(First). We harvest to order, so you receive the fruit in its natural season, freshly
picked: the availability of each size is indicated directly on the product sheet.

How to use organic lemons in cooking

Of organic lemons, everything is used: juice, pulp, and zest. Since the peel is untreated,
grated zest becomes a versatile aromatic ingredient in many preparations.
