Properties
Compared to other legumes, peas contain more water (up to 80 percent) but less vegetable protein (around 5.5), fiber (about 6.3), and carbohydrates (around 6.5). Although the fiber content is not as high as in other seeds of the same family, it is still abundant and, more importantly, sufficient to aid the intestine, making it useful in cases of constipation. The extreme scarcity of fats makes them suitable for low-calorie diets (however, dried peas contain many more calories than fresh ones); they also possess important diuretic properties.
