SICILIAN ARTICHOKES
The Violetto di Sicilia artichoke is one of the many varieties of the Violetto artichoke, such as those from Puglia, Tuscany, Liguria, and Veneto.
CHARACTERISTICS
The Violetto di Sicilia artichoke forms slightly elongated heads with a closed, semi-globose calyx. The bracts are green with violet hues, even during warmer periods. It has a cylindrical shape, with strong purplish shades. It has become an emblem of excellence. Its rounded shape makes it entirely similar to a fleshy flower. Its taste is sweet, delicate, though slightly bitter.
PROPERTIES
It has many properties: it is digestive, diuretic, recommended in diets because it is low in fat and rich in carbohydrates and potassium. It has a purifying action and helps the proper functioning of the intestine and liver, promoting cell regeneration. It lowers cholesterol, improves cardiovascular activity, and has antioxidant properties.
Furthermore, it is rich in vitamins, mineral salts, calcium, and iron. Consumption is also recommended for diabetics. All of this contributes to making it one of the most prestigious, delicious, and sought-after vegetables in Sicily, thanks to its particular climate and soil conditions.
