Imperial Asparagus of Sicily

As the name "Asparagus officinalis" suggests, the healthy virtues of this vegetable are described and praised in many ancient texts. Asparagus is rich in fiber, vitamin A, B6 and C, and is an excellent source of folic acid, providing limited amounts of protein and sugars, and rich in fundamental mineral elements for humans (calcium, phosphorus, magnesium and potassium).

Here are some properties of asparagus:

• Diuretic (against urinary retention, facilitates the elimination of excess fluids and metabolic waste);
• Anti-hypertensive and kidney function preserving (thanks to the presence of an ACE inhibitor, hydroxynicotianamin).
• Anticoagulant – increases blood fluidity (heart attack prevention)
• Laxative – stimulates sluggish bowels, thanks to increased peristalsis.
• Others: anxiolytic, antifungal, antimutagenic, anti-inflammatory and antiparasitic.
